Albers Cornbread – Albers® Corn Meal & Grits

This moist cornbread can be served with salads, soups, stews, chilies, or southern fried chicken. Try it toasted and spread with butter and jam in the morning.

Ingredients:

1 cup Albers® White or Yellow Corn Meal
1 cup all-purpose flour
1/4 cup granulated sugar
1 Tbsp. baking powder
1 tsp. salt
1 cup milk
1/3 cup vegetable oil
1 large egg (lightly beaten)

  • PREHEAT oven to 400°F. Grease 8-inch square baking pan.
  • COMBINE meal, flour, sugar, baking powder and salt in medium bowl. Combine milk, oil and egg in small bowl; mix well. Add milk mixture to flour mixture; stir just until blended. Pour into prepared pan.
  • BAKE for 20 to 25 minutes or until wooden pick inserted in center comes out clean. Serve warm.
  • NOTE Recipe may be doubled. Use greased 13×9-inch baking pan; bake as above.

Sweet Cornbread – Albers® Corn Meal & Grits

If you enjoy a sweet and moist corn bread, you will like this recipe. Serve warm with a drizzle of honey.

1 1/2 cups all-purpose flour
2/3 cup granulated sugar
1/2 cup Albers® White or Yellow Corn Meal
1 Tbsp baking powder
1/2 tsp salt
1 1/4 cups milk
2 large eggs (lightly beaten)
1/3 cup vegetable oil
3 Tbsp butter or margarine (melted)

Steps:

  • PREHEAT oven to 350°F. Grease 8-inch square baking pan.
  • COMBINE flour, sugar, corn meal, baking powder and salt in medium bowl. Combine milk, eggs, vegetable oil and butter in small bowl; mix well. Add to flour mixture; stir just until blended. Pour into prepared baking pan.
  • BAKE for 35 minutes or until wooden pick inserted in center comes out clean.

This is one of the first things I remember baking as a child. My mom would let me mix it up all by myself and it was the first recipe I had memorized. I never knew where she got it until one day recently I was looking at the box of Alber’s cornmeal, and lo and behold, it was on the box! Nevertheless, it’s a good recipe and I still enjoy it, especially with a little butter and honey.

Ingredients:

1 cup cornmeal
1 cup flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/3 cup oil
1 egg
1 cup milk

Steps:

  • Preheat oven to 400 degrees.
  • Grease a 8×8 baking dish or a 9-inch pie plate.
  • Combine all ingredients; pour into prepared dish.
  • Bake for 25 minutes.
  • Let cool slightly before cutting.
