Puerto Rican almojábanas are fritters made with rice flour. It’s typically found in the northeastern and central regions of the island.
This recipe has a sweet version and a salty one. The sweet type is served drenched in honey or brown sugar. The salty version has parmesan cheese or queso fresco. Personally, I prefer the sweet kind with a cup of coffee.
