Ingredients
1 lb Breadfruit(fresh or frozen) cut into chunks
2 branches Thyme
2-3 minced Garlic cloves
1 medium Onion
1 medium Bell pepper
1/2 cup Water (you may need more or less)
1/4 cup Vegetable or olive oil
3 tbsp Curry powder
2 tbsp Tomato paste
1 tsp Salt
1/2 tsp Black pepper
Instructions
Boiling the breadfruit:
- Put the chunks of breadfruit into a pot of boiling water that has been salted.
- Boil until the breadfruit are cooked and you can pierce them with a fork, which takes 10-12 minutes. Do not boil them too long.
- After they are cooked, drain them and set them aside.
Making the curry:
- In a large skillet or saucepan over medium heat, heat the oil then add the onions, bell peppers and garlic.
- Cook for 2-3 minutes, until the vegetables are tender.
- Stir in the curry, salt, black pepper, tomato paste followed by the water.
- Stir everything together then cover and simmer, let it simmer for 5-7 minutes.
- Let the breadfruit chunks cook for 7-10 minutes.
