Since I created recipes with coconut milk as the key ingredient, my readers have loved them! I couldn’t wait to experiment in the kitchen with another Jamaican-inspired recipe. I’ve found that the unique taste of Jamaican-style rundown sauce is perfect for breadfruit.

Ingredients

1 lb Breadfruit(fresh or frozen) cut into chunks
2 branches Thyme
2-3 minced Garlic cloves
1 medium Onion
1 medium Bell pepper
1/2 cup Water (you may need more or less)
1/4 cup Vegetable or olive oil
3 tbsp Curry powder
2 tbsp Tomato paste
1 tsp Salt
1/2 tsp Black pepper

Instructions

Boiling the breadfruit:

  1. Put the chunks of breadfruit into a pot of boiling water that has been salted.
  2. Boil until the breadfruit are cooked and you can pierce them with a fork, which takes 10-12 minutes. Do not boil them too long.
  3. After they are cooked, drain them and set them aside.

Making the curry:

  1. In a large skillet or saucepan over medium heat, heat the oil then add the onions, bell peppers and garlic.
  2. Cook for 2-3 minutes, until the vegetables are tender.
  3. Stir in the curry, salt, black pepper, tomato paste followed by the water.
  4. Stir everything together then cover and simmer, let it simmer for 5-7 minutes.
  5. Let the breadfruit chunks cook for 7-10 minutes.
  6. Enjoy!
