3 lemons (preferably large) |
1 tablespoon of salt |
2 teaspoons of fresh rosemary |
2 cloves of garlic |
1/2 teaspoon of black pepper |
2 tablespoons plus 1 cup of extra virgin olive oil |
2 tablespoons of butter |
a splash of white wine |
1 cup of chicken stock |
Steps:
- PrepareGather all of the ingredients you need for this recipe. Rinse your chicken and pat dry once the chicken has been rinsed. Grab a large bowl and your chicken, as well as the parsley, garlic, salt, black pepper, rosemary, the juice of two lemons, and one cup of the extra virgin olive oil. Cover the bowl and leave to marinate in the refrigerator anywhere from 8-24 hours.
- Cook the Chicken Grab a large pan and heat two tablespoons of extra virgin olive oil over a medium heat. When you're ready to cook the chicken, remove the chicken from the marinade and add to the pan. Ensure the chicken has enough space to cook and it is not overcrowded. Turn chicken over once it begins to brown and cook until the chicken has been cooked through. The juices should run clear and chicken should be white inside when cooked. Remove chicken from pan.
- SimmerAdd a splash of white wine and one cup of chicken stock to the pan. Reduce heat and leave to simmer for a few minutes. Now add a pinch of salt and black pepper, as well as the juice of one lemon and two tablespoons of butter. Leave on a low heat for a few minutes.
- ServeOnce the liquid is warm and flavorful, pour the liquid from the pan over the cooked marinated chicken. Garnish with rosemary if you'd like. Serve as it is, or with a side dish of your choice. Enjoy!
