Chinese Chicken Fingers Recipe

Chinese chicken fingers are not only delicious but it's easy to make and you can use whatever you have in your refrigerator to make them. The chicken fingers are fried until they are golden, which gives a delicious crunchy bite.

2 chicken breasts (boneless and skinless)
1/2 cup self-rising flour
1/2 cup cornstarch
1/2 teaspoons salt
1/2 teaspoon sugar
1/2 cup Seltzer water
1 quart canola oil

  • In a large bowl, sift the dry ingredients together and stir them until well combined.
  • Stir in the seltzer water slowly until well combined. Make sure the batter is thicker than the pancake batter. To adjust the consistency, add more flour or seltzer water as needed.
  • Slice the chicken into strips and sprinkle with salt. Dip the chicken in the batter, making sure it is completely covered.
  • Place the chicken into a preheated deep fryer and cook for about 10 minutes, until golden brown.  Served hot with a sweet and sour sauce. Enjoy!

1 teaspoon soy sauce
1/2 teaspoon salt
1/4 teaspoon ground white pepper
For the batter:
1/2 cup flour
1/2 cup pancake mix
1/2 cup cornstarch
1 egg
2 teaspoons baking powder
1 cup water
For the sauce:
1/3 cup sugar
1/2 cup ketchup
2 teaspoons cornstarch
2 teaspoons white vinegar
1/2 cup water
1/2 teaspoon salt

    • Cut chicken breast into medium strips.
    • Season with soy sauce, salt and pepper.
    • Combine flour, pancake mix, cornstarch, egg, baking powder, and water. Mix well to form a smooth batter.
    • Dip chicken pieces in batter, and deep fry at 350 degrees for 5 minutes or until golden brown.
    • To make the sauce:
    • In a heavy bottom medium saucepan, mix all the ingredients. Bring to a boil over medium heat, while stirring.
    • Cook for 2 minutes to thicken. Remove from heat. Transfer to a serving dish. Allow to cool.
