Sisig | Tastemade

Sisig is massively popular in the Filipines and a very flavorful dish. It uses different parts of the pig and all come together in an amazing stir fry.

Yield: 1

Ingredients:

1 1/2 pounds or 1 kilogram mix pork head parts (chopped ears, cheeks, nose, heart etc…)
1/4 cup chicken liver
1/4 cup cane vinegar
2 long green chilies
1 onion
Juice of 1 lime
1 bay leaf
4 tablespoons pineapple juice
1 teaspoon chili powder
2 tablespoons japanese mayo
1/3 cu rice vinegar
1 tablespoon ginger
2 tablespoons garlic
Salt
4 tablespoons soy sauce
1 egg
1/4 cup butter

  • Boil all pig parts for an hour in the salt, water and pineapple juice. Drain and then grill over charcoal or a high heated grill pan
  • In a wok, fry garlic cloves, 1 tablespoon of ginger, chopped chicken liver, thinly sliced heart vinegar, chili, onions, then add in the grilled meats
  • Add lime juice, pineapple, soy sauce to taste, wait until the mix thickens. Then add butter and crushed bay leaf
  • Place in an oven friendly dish. crack and egg on top. broil.
