Sisig is massively popular in the Filipines and a very flavorful dish. It uses different parts of the pig and all come together in an amazing stir fry.

Ingredients:
1 1/2 pounds or 1 kilogram mix pork head parts (chopped ears, cheeks, nose, heart etc…) |
1/4 cup chicken liver |
1/4 cup cane vinegar |
2 long green chilies |
1 onion |
Juice of 1 lime |
1 bay leaf |
4 tablespoons pineapple juice |
1 teaspoon chili powder |
2 tablespoons japanese mayo |
1/3 cu rice vinegar |
1 tablespoon ginger |
2 tablespoons garlic |
Salt |
4 tablespoons soy sauce |
1 egg |
1/4 cup butter |
Steps:
- Boil all pig parts for an hour in the salt, water and pineapple juice. Drain and then grill over charcoal or a high heated grill pan
- In a wok, fry garlic cloves, 1 tablespoon of ginger, chopped chicken liver, thinly sliced heart vinegar, chili, onions, then add in the grilled meats
- Add lime juice, pineapple, soy sauce to taste, wait until the mix thickens. Then add butter and crushed bay leaf
- Place in an oven friendly dish. crack and egg on top. broil.
