COLOMBIAN AREPAS RECIPE | Small Recipe
This is a quick and easy recipe to make delicious Colombian arepas. They are usually served for breakfast, as a side dish, or even for a quick meal.

Yield: 6 arepas
Ingredients:
1 cup warm water |
1 cup pre-cooked white corn meal (such as P.A.N.®) |
1 cup shredded mozzarella cheese |
1 tablespoon butter |
½ teaspoon salt, or to taste |
cooking spray |
Steps:
- Mix water, corn meal, mozzarella cheese, butter, and salt together in a large bowl. Knead until mixed well and the dough has a soft consistency. Form balls the size of a medium orange and place them between 2 sheets of plastic wrap. Flatten with a rolling pin to your desired thickness.
- Cut the dough into circles using a cereal bowl or drinking glass, lip-down, through the plastic wrap. Remove the plastic wrap and remove excess dough.
- Coat a griddle with cooking spray and heat to medium-high. Add arepas and grill until golden brown, about 5 minutes per side. Serve immediately.

Ingredients:
1 cup pre-cooked white or yellow arepa flour or cornmeal |
1 cup warm water |
2 Tbsp butter |
¼ tsp salt |
2 lb sirloin or skirt, trimmed and cut into small pieces |
1 Tbsp vegetable oil |
2 cups tomato, chopped |
2 scallions, finely chopped |
2 garlic cloves, minced |
1 Tbsp ground cumin |
Salt and black pepper |
2 Tbsp fresh cilantro, chopped |
1 cup guacamole |
1 cup cooked corn |
Steps:
- To make the arepas Combine the cornmeal, warm water, 1 Tbsp butter, and salt, mixing thoroughly. Let mixture stand for five minutes. Knead with your hands for about 3 minutes, moistening your hands with water as you work. Form 4 small balls with the dough. Place each ball between 2 plastic bags and, with a flat pot cover, flatten to ¼ inch. Add the butter to a nonstick pan over medium heat. Place the arepas in the pan, and cook about 3 minutes on each side, until a crust forms or they are golden brown. To make the beef In a large skillet, heat the oil over medium heat. Add the tomatoes, scallions, cumin and garlic. Cook for about 7 minutes. Add the steak pieces into the skillet and cook for 3 minutes per side. To serve Place an arepa on a serving plate. Top with guacamole, beef, and corn. Sprinkle with fresh cilantro and serve.
