This is another recipe from my dad, L McDonald. Every time you went to visit this was set on the table with crackers. My dad was always feeding us no matter if you were hungry or not. He use to go camping every year for a month, and stock up on blue back’s. At the bottom of my recipe he has “call dad for help” with his phone number.

Ingredients:
20 – blue back, raw, 11″ to 12″ |
– onion slices |
MIX |
2 tablespoon(s) pickling salt |
9 tablespoon(s) white vinegar |
9 tablespoon(s) ketchup |
Steps:
- Clean fish. Remove skin and cut into 2″ chunks.
- Add mix ingredients together: salt, vinegar, ketchup.
- Hot jars and lids. Use 7 pints or 1/2 pints (10 to 11), wide mouth jars.
A layer of fish, add sliced onion, 1 tb mix

Repeat until 1/4″ from top. (firm) - Put on lids and rings. Put in presser cooker.
Presser cooker: Add 2 quarts of water, close lid.
Steam: good strong steam for 10 minutes. Close valve
and presser cook at 15# for 100 minutes.
