Dubbed as an Italian word for “Ice Cream”, Gelato somewhat differs slightly from typical ice cream. Both are well-loved summer desserts enjoyed by people of all ages but let me tell you what gelato is made of.

Both have the same ingredients such as milk, cream, and sugar. However, gelato is made of more proportion milk and lesser cream compared to a typical ice cream that is made of more cream and lesser milk content. Gelato is denser than ice cream since it is churned at a slower speed compared to ice cream. And lastly, the ice cream is stored and served at a lower freezing temperature than gelato which is stored at a slightly warmer temperature and not frozen completely. So when you talk about the best-loved cool dessert in Italy, gelato is the name.

Ingredients

2 cups milk
1 cup heavy cream
4 egg yolks
½ cup sugar

Instructions

Step 1:

Mix milk and cream in a medium saucepan. Warm until foam forms around the edges. Remove from heat.

Step 2:

Beat egg yolks and sugar until frothy in a large bowl. Gradually pour the warm milk into egg yolks and sugar, whisking constantly. Return mixture to saucepan; cook over medium heat, stirring with a wooden spoon until the mixture gels slightly and coats the back of the spoon. If small egg lumps begin to show, remove from heat immediately.

Step 3:

Pour the mixture through a sieve or fine strainer into a bowl.

Cover, and chill for several hours or overnight.

Step 4:

Pour mixture into ice cream maker and freeze according to the manufacturer's instructions.

Transfer to a sealed container, and freeze until firm. If the gelato is too firm, place it in the refrigerator until it reaches the desired consistency.
