A healthy and satisfying white bean soup

Ingredients:
2 cups beans |
2 oz bacon |
2 teaspoons olive oil |
1 large onion |
4 medium carrots |
6 stalks celery |
4 cups chicken broth |
2 each bay leaves |
2 tsp green goddess dry mix |
Steps:
- Pressure cook the beans for 10 minutes in 6 cups of water. Sautee the bacon in the olive oil until browned. Add the vegetables and cook until onions are translucent. Add the beans and their pot liquor, plus the broth. Add salt, pepper and spices. Simmer over low heat until beans are tender.
