WHAT IS CHILI OIL RECIPE?

Gochugaru, garlic, and other ingredients are combined to create a homemade hot chili oil recipe that is sure to add zest to your meals. It can be used as a marinade or dip for meat or vegetables. The Gochugaru is first roasted in neutral oil to take away its redness and mellow out its flavour.

Chilli oil is one of the most commonly used Asian cooking ingredients, whether as a condiment or as an ingredient in marinades and sauces. It’s also known as chili bean paste, sambal oelek, sambal belacan or tau cheo, and it can be found in any Asian food store or supermarket near you.

* 1/4 cup vegetable or peanut oil
* 1/4 cup hot chilli flakes (Thai, jalapen, bird's eye)
* 2 tablespoons finely grated fresh ginger
* 1 tablespoon rice wine vinegar and a pinch of sugar

If you’re ready to give it a try, start by checking out your local Asian market. Just ask for chilli oil or hot chilli oil. You can also try a big box or grocery store; look for sesame or vegetable oil and go from there.

If they don’t have hot chilli oil, you can use hot chilli flakes and some fresh hot chilis (or a combination) to kick up the flavour in an already existing bottle of vegetable or sesame oil that you probably already have at home. Using fresh chilis will take more time than simply adding dried flakes but if you like cooking, it’s worth it!

Instructions

Making homemade chilli oil is a simple process. Before you start cooking, gather all of your ingredients and measuring tools in one place. The recipe below calls for a large stock pot, but you can substitute any large saucepan. Once you're ready to go, add 1 cup of canola oil and two cups of crushed red pepper flakes to your pot. Over medium-low heat, slowly bring your oil mixture up to 185 (85).

As it approaches that temperature, add 1 tablespoon of chile paste and continue heating. Let it cook until it reaches a dark red colour, then remove it from heat immediately or risk burning your spicy liquid. If you burn your spices they will lose their flavour and aroma; if that happens, throw out what you have made!

Once your oil has cooled completely, strain it into a glass jar. For better flavour, pour it through a cheesecloth first before using a coffee filter or paper towels. Store chilli oil in an airtight container for up to two months at room temperature or up to six months in your freezer. Enjoy!
