Menma (Seasoned Bamboo Shoots) is a classic Japanese ramen topping but can also be enjoyed as a snack. Slightly crunchy and extremely flavorful.

1/2 cup Bamboo Shoots
2 cup Water
1/2 cup Teriyaki Sauce
1/4 cup Mirin
1 handful Bonito Flakes

Steps:

  • Combine the Bamboo Shoots (1/2 cup), Water (2 cup), Teriyaki Sauce (1/2 cup) and Mirin (1/4 cup) in a medium saucepan.
  • Bring to a boil over medium-high heat, add the Bonito Flakes (1 handful), then reduce the heat and simmer for 25 minutes.
  • Remove from the heat and let cool. Transfer the menma and its seasoning liquid into an airtight container and refrigerate overnight before using.
  • Store in the container with the liquid in the refrigerator for up to a week.

How to make Menma - Japanese Bamboo Shoots - Food and Meal

Menma are dried and fermented bamboo shoots. It is a topping that the Japanese added to ramen from the earliest shops. It’s usually served as small, rectangular pieces of preserved bamboo shoot, though more and more shops are sourcing unique pieces like the tender tips or meaty stalks. You’ll find it dried (which must be reconstituted by soaking them in water) or preserved in liquid in bags, jars, or cans. Menma soaks up flavor, so rinse away whatever it was packaged in and season it with your own flavors. For a vegetarian version, use teriyaki sauce instead of chashu seasoning liquid.

How To Make Spicy

Menma is a staple ramen noodle topping, which has an appealing crunchy texture and sweet soy-saucy bamboo shoots. The recipe is not complicated. Super-easy to make.

Ingredients:

1 Canned bamboo shoots
1 tbsp Japanese Dark Soy Sauce (Kikkoman)
1 tbsp Sugar
1 tbsp Sake /White wine
1 cup Water
½ TSP Hondashi /Chinese chicken soup powder/ Chicken Soup powder
½ Dried red chili pepper (*Optional)
Toasted Sesame oil (*Optional)

Steps:

  • Rinse well bamboo shoots and drain.
  • In a milk pan, add all ingredients.
  • Bring the sauce to a boil over medium heat, and reduce the heat to medium-Low.
  • Cover bamboo shoots with Otoshibuta/ paper towel, parchment paper, or aluminum foil lid. *Refer to the post on how to make a paper towel, parchment paper, or aluminum foil lid.
  • Simmer it until the sauce is reduced for approximately 10-15 minutes.*The heat should be medium-low or low that you can see bubbles. *Taste a piece and add the cooking time if needed. Add water if needed.
  • Turn off the heat and transfer Menma bamboo shoots to a container.
  • Drizzle toasted oil if desired.
  • The taste will be better after letting it rest for while (or overnight.)
