CARROT PRUNE BREAD

Carrot Prune Bread | Just A Pinch Recipes

I found this recipe online and altered it slightly to my taste. You can use raisins or chopped prunes as I have in the image.

Great for a quick breakfast or snack.

NOTE: I omitted nuts because my kids won’t eat them!

2 large eggs
1 cup(s) sugar
2/3 cup(s) vegetable oil
1 teaspoon(s) vanilla
1 1/2 cup(s) flour
3/4 teaspoon(s) baking soda
1 teaspoon(s) cinnamon
1 teaspoon(s) nutmeg
1 teaspoon(s) salt
1 1/2 cup(s) carrots (finely grated, raw)
1 cup(s) walnuts (chopped) if desired
3/4 cup(s) chopped dried prunes or raisins

Steps:

  • Preheat oven to 350 degrees. Grease and flour a 9×5 inch loaf pan and set aside.
  • Beat eggs and add sugar, oil and vanilla. Sift flour, soda, spices and salt and add to egg mixture. Beat well.
  • Add carrots, fruit and nuts (if desired). Pour batter in pan and bake for about one hour or until toothpick inserted in center comes out clean.

Ingredients:

1 cup all-purpose flour
1 cup quick cooking oats
1 ½ teaspoons baking powder
1 teaspoon ground ginger
½ teaspoon baking soda
½ teaspoon grated nutmeg
½ teaspoon ground cloves
1 cup plain yogurt
1 cup chopped pitted prunes
½ cup white sugar
2 eggs, beaten
1 teaspoon maple syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5x3-inch loaf pan.
  • Mix flour, oats, baking powder, ground ginger, baking soda, nutmeg, and cloves together in a bowl.
  • Whisk yogurt, prunes, sugar, and eggs together in a large bowl; add flour mixture and stir. Fold maple syrup into the mixture; pour into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 minutes. Cool in the pans for 5 minutes before removing from pan to a wire rack to cool completely.

Ingredients:

1 cup pitted prune
water, to cover prune
2 large eggs
3 tablespoons vegetable oil
1 cup granulated sugar
1 tablespoon grated orange rind
1 teaspoon orange extract
1/2 cup orange juice
2 1/4 cups all-purpose flour
1/4 teaspoon cinnamon
1 1/2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup chopped nuts

Steps:

  • cover prunes with water and cook until tender.drain and reserve 1/2 cup prune water.
  • cool prunes, then dice.
  • in a bowl, beat eggs slightly with fork and add oil, sugar, orange peel, extract and reserved prune water and orange juice — mix well.
  • add flour, baking powder, salt, cinnamon.add nuts and diced prunes.
  • stir only enough to moisten ingredients.
  • grease and flour a 9×5″ loaf pan.
  • pour batter into pan and bake in 350* oven for 55-60 minutes or until it tests done when wooden pick inserted near the center comes out clean.
  • cool in pan 10 minutes.
  • remove from pan to rack and cool completely before slicing.

Can you make prune bread in a loaf pan?

I’ve tried prune bread in a loaf pan and it seemed a bit dry. I tried this version in a bundt pan and it was so good. I love the addition of the white chocolate chips too it. How to bake prunes in the oven?

Combine prunes and water in a small saucepan over medium-high heat. Preheat oven to 350 degrees F (175 degrees C). Mix flour, 1 1/2 cups sugar, allspice, baking soda, nutmeg, cinnamon, and salt together in a mixing bowl. Pour batter into prepared pan and bake in preheated oven until a tester comes out clean, about 45 minutes.
