Ingredients:
| 1 Lb – Ground Beef, High Quality |
| 2 – Egg Yolks |
| 2 t – Sherry Vinegar |
| ½ t – Ground Mustard |
| ¼ C – Shallot, Minced |
| 2 T – Chopped Parsley |
| ¼ C – Olive Oil |
| 2 T – Capers, chopped |
| ½ t – Buried Treasure – Truffle Butter |
Steps:
- In a medium mixing bowl, combine the yolks, sherry vinegar, ground mustard minced shallots, capers and chopped parsley. Mix well with a whisk.
- While whisking, slowly drizzle the olive oil into the mixture to create an emulsion.
- Add cold meat to the mixture and combine by hand, using gloves.
- Combine until just incorporated.
- Serve with cocktail rye and enjoy!
