- Onion, celery, carrots, and garlic
- The best type of red wine
- A cup of cornflour and vegetable oil

- Fresh herbs like thyme, parsley, and rosemary
- Mash tomatoes and make a paste. This will give the dish a rich flavor with the slight tang of tomatoes.
- To make the broth, you can boil some beef bones beforehand or buy beef broth cubes and dilute them in water. Choose a low-sodium broth for this recipe.
Step 1: Take your dutch oven and keep it on the countertop. Now preheat the oven to 300 degrees Fahrenheit which is one fifty degrees centigrade. Season the beef short ribs with pepper and salt. Now heat the vegetable oil in the dutch pan, and cook the meat on low medium flame. You need to get the brown color on all sides of the meat and cook for at least four minutes per side. You can cook the ribs in batches. After you have fried the ribs, keep them aside on a plate.
Step 2: Reduce the pan's oil and place it in the oven once again. Now add the diced garlic, celery, onion, and carrots. Cook the veggies for at least six minutes until they turn brown. Fold in the tomato paste and cook for another minute until the raw smell goes away. You have to lower the flame, just to avoid burning the veggies.
Step 3: Add the red wine to the pan, scrape the remnants of vegetables from the sides and mix them with the wine. Wait till it simmers, and add the beef broth to a bowl, add some gelatin and pour it into the Dutch oven.
Step 4: Now, add the short ribs to the broth, so that they can suck up the juice. Add bay leaves, and thyme and cover it partially, and cook it on low flame for two to three hours.
Step 5: Once the meat is cooked, take out the meat pieces from the broth with a tong, and be very careful as the pieces may fall off. Set it aside on a plate. Now, using the sieve pour the broth into the measuring cup. While pouring the broth mash the veggies into the sieve so you get a thick broth. This way you will get the sauce.
Step 6: Add the broth to the pan and turn on the heat. Dilute one tablespoon of cornflower in a cup with water and pour it into the broth. Mix it until you get a syrup-like texture. Your sauce is ready.
Step 7: Lastly, with a spoon cover the meat with the delicious sauce. You can have a side of mashed potatoes with this dish.
