Smoked Eggs Recipe | Small Recipe

This smoked egg recipe is incredibly easy. I learned it from a neighbor and it is a fun way to use up the extra space in your smoker grill. The eggs turn a lovely brown color and have a consistency similar to boiled eggs. The insides have a tinted brown color, too. Reduce cook time if you prefer a softer boiled egg.

  • Preheat a smoker grill to 225 degrees F (110 degrees C). Add wood chips according to manufacturer’s directions.
  • Place whole eggs directly on the grate of the preheated smoker. Cook, without turning, for 2 hours, maintaining an even temperature.
  • Transfer eggs to a plate and allow to cool completely before peeling. Season with salt and pepper.

Devilled eggs are a classic. This is a great twist to the classic that adds lots of flavour to this already delicious dish.

Ingredients:

1 pinch Salt & pepper
1 tsp Paprika
1 pinch Minced parsley or your favourite fresh herb
2 teaspoons yellow mustard
2 – 2 1/2 tablespoons mayonnaise
6 whole large eggs
1 bowl ice water
1 Dinner fork
1 medium Medium saucepan & lid
1 Mixing bowl
1 Sealable plastic bag
1 Sharp knife
1 Spatula

Steps:

  • Set up your smoker as per your instruction manual and preheat to 320°F.
  • Place eggs in the smoker and smoke for 10 – 15 minutes, then rotate and smoke for another 15 minutes
  • Once the eggs are cool, peel and remove the yolk
  • Transfer yolks into a bowl and the whites on a platter with the cut side facing up.
  • Mash your yolks with a fork until completely crumbled.
  • Mix in 2 tablespoons of the mayonnaise and mustard into the crumbled yolks. Mix and mash until you are left with a smooth paste. If the mixture feels too stiff add more mayonnaise and mix one teaspoon at a time until you are happy with the texture.
  • Season with salt and pepper to taste.
  • Using a spatula scoop the mixture into a piping bag (or plastic bag). Use a 1/2 inch round tip (or cut bag to a 1/2 inch tip in the bottom corner)
  • Pipe the mixture into the cup section of each egg white. You want to place enough in each cup to be left with a little mound bulging out.
  • Sprinkle with a good dusting a paprika, and fresh herbs. I also like to re-season with salt & Pepper.

  • Start your smoker, grab your pellets, and as per the instructions, preheat the smoker at 325ºF. Make sure you’re using indirect heat!
  • Place eggs directly onto the grill grates, and cook for 35 minutes.
  • Remove the eggs from the smoker and place them in ice-cold water. Allow them to take an ice bath for 10 minutes to stop the cooking process.
  • Remove the eggs from the ice bath and peel. Reduce the heat on the grill to 175ºF. Return the eggs to the grill and smoke again for 35 minutes to an hour.
  • Remove the eggs from the grill, season, and enjoy!

If you want a really bold smoke flavor, go with something like mesquite. If you want things a bit more mellow and mild, choose an alder or maple wood. Place the eggs directly on the grill grates again and smoke for at least 30 minutes, or up to an hour.

Placing the eggs in the ice bath will make them easier to peel. One of the biggest complaints about smoked eggs is they are difficult to peel. This little trick will make it easier!
