1 pound fresh speckled trout |
2 tablespoons butter |
1 tablespoon lemon pepper |
1 teaspoon capers |
1 pinch paprika, or to taste |
ΒΌ cup white cooking wine |
1 teaspoon minced fresh parsley, or to taste |
Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a baking dish with aluminum foil.
- Place trout in the middle of the aluminum foil; top with butter, lemon pepper, capers, and paprika. Pour cooking wine over trout. Close foil around the trout.
- Bake in the preheated oven until fish flakes easily with a fork, about 30 minutes. Garnish trout with parsley.

2 pounds Speckled Trout Filets |
3 lemons |
3 tbsp butter |
2 tbsp Seafood Magic Seasoning Blend (Substitute Old Bay or other seafood seasoning blend.) |
Steps:
- Rinse the trout and pat dry with paper towels.
- Season the trout liberally with the seafood seasoning
- Slice two of the lemons into thin rounds.
- Juice the third lemon and mix the lemon juice with the melted butter.
- Place a large sheet of aluminum foil on the grill.
- Arrange the lemon rounds all across the surface of the foil.
- Place the trout on top of the bed of lemons.
- Grill on high heat for 15 minutes and baste with butter and lemon juice every five minutes.
- The trout is done when it reaches an internal temperature of 145F and flakes easily.
