Ingredients:
2 Lbs. of Suadero Meat |
2 Tbs. of beef rendered fat or vegetable oil |
12 corn tortillas |
2 cups of water of more just enough to cover the meat. |
1/2 white onion finely diced. |
1 small bunch cilantro finely chopped |
salt to taste |
A hot salsa |
Steps:
- Boil the meat for at least 2 hours until soft and brown. If you have time, then marinate it overnight.
- Chop the boiled meat as finely as possible and fry in oil or beef fat in a pan. (Fry marinated meat in the same way, without boiling, then chop). Then return it back to the pan, salt and mix with the remaining fat and oil
- Preheat the corn tortillas in a pan with a little oil. Put inside the filling. First meat, then chopped onions, cilantro, salt and salsa.

How to make taco meat?

Add 1/4 cup of oil to pressure cooker and preheat to medium/high for 5 minutes. Mix the salt, pepper, garlic and chile ancho powder. Season the suadero both sides. Set aside for a few minutes. Once oil is hot, sear the beef for 5 minutes per side. Remove it from the pot and add another drizzle of oil. Add the onion and garlic. Saute for 3 minutes.
