Here is the recipe for one of the most popular Indian vegetable curry dishes called Aloo (potatoes)-Gobi (cauliflower) that you can easily find on the menu of any restaurant in India.

The flavor-packed, delicious, and healthy aloo gobi recipe can be made comfortably in any kitchen. The main ingredients of the recipe include cauliflower florets, potatoes, onions, herbs, and spices. There are some variations of the recipe as well including aloo matar gobi that are quite popular in the Indian subcontinent. However, for the method and the instruction purposes, we will stick to the aloo gobi recipe only. This particular dish is an everyday meal in Indian homes. Its variations (with even more vegetables and ingredients) are popular as preparation for occasions (such as weddings) as well.

The below-given list includes all the important ingredients of the aloo gobi or the potato-cauliflower curry recipe.

* Cauliflower florets: 300 grams (cut and chopped)
* Medium size potatoes: 3 (cut and chopped, bite-size).
* Olive oil: 100 ml.
* Large-size tomatoes: 2 (cut and chopped).
* Large-size red onions: 2 (cut and sliced).
* Chili powder: one teaspoon (you can also replace it with 2 green chilies if you like).
* Salt: 1 teaspoon.
* Turmeric powder: two teaspoons.
* Garam masala (powdered mixture of spices and condiments that is available in commercial packs as well): 1 teaspoon.
* Coriander powder: (half) teaspoon.
* Cumin seeds: 1 tablespoon.

Instructions

STEPS/HOW TO MAKE 

The Indian vegetable curries (or the sabzis) are quite delicious and nutritious at the same time. Gobi (cauliflower) and aloo (potatoes) have different cooking times. Therefore, you must add them at distinct stages of the cooking process. It will ensure that the cauliflower remains crunchy while the potatoes are soft and tender at the time they are served.

The preparation time for the recipe is 10 minutes. However, you may require approx. 60 minutes of total time and 45 minutes of cooking time for it.

STEP 1: take a cooking skillet/pan, add olive oil to it, and put it on the burner/stove. Apply medium heat to the pan and the oil until the oil becomes hot.

STEP 2: add one tablespoon of cumin seeds to the oil. Sauté the seeds for approximately 1 minute until they become fragrant.

STEP 3: now add the onion slices to the cooking pan. Dice and toss the onions for 3 or 4 minutes until they become golden brown. By this time, the onions will also get soft and tender.

STEP 4: at this stage, you need to add chopped tomatoes to the pan. Now cook the tomatoes and the ingredients for another 3 or 4 minutes until the tomatoes become soft and tender.

STEP 5: once all the vegetables are soft and tender, it's time to add the spices to your aloo gobi recipe. At this point, you will have to add turmeric, garam masala, chili powder, coriander, and salt to your pan and the ingredients. If you are using green chilies, ensure that it is cut and chopped before you add them to the pan. Stir and dice the ingredients so that the spices mix well with the vegetables and ingredients. You can also add a few tablespoons of water to ensure that the spices do not get burned.

STEP 6: you now need to add the potatoes. They are to be added to the ingredients and the pan before you add cauliflower florets.

After adding the potatoes to the ingredients, mix and fry well for 2 minutes and cover the pan for a few minutes. It will ensure that the potatoes are soft and tender. You can also add a few tablespoons of water again to ensure that the vegetables and spices do not burn.

STEP 8: now you can uncover the pan and add to it the cauliflower florets. Stir and fry for 3 or 4 minutes.

STEP 9: cook the ingredients at low to medium heat for another 10 to 15 minutes. You can increase the water content if you want more gravy.

TIPS & TRICKS

Below are some important advice, tips, and tricks that can be handy when you cook the delicious aloo gobi recipe.

1. To enhance the flavor of the recipe, you can add readymade spices (for instance one pack of Maggi masala) to the recipe.

2. Always choose fresh vegetables for any vegetable recipe including the aloo gobi recipe. The fresh cauliflower florets will be crispier.

3. Add cauliflower to your cooking pan after some time of adding the potatoes. It will ensure that the potatoes are tender while the cauliflower is still crispy at the time of serving.

4. If you are looking for variations, you can add some more vegetables to your aloo gobi recipe. Some of the most popular options include matar (green peas) and/or Shimla Mirch (capsicum).

5. To make your dish unique, you can also add to it amchur or Kasuri Methi for that unique flavor, aroma, and taste.
